Super Bowl Snacks

Hi guys,

Living in New England we have gotten spoiled with Super Bowl appearances and it NEVA gets old.  NEVA!  Typically at these parties there's a TON of high complex carb, high glycemic snacks and booze,  so I've found some easy and delicious paleo snacks for a Super Bowl party.

Buffalo Chicken DrumSticks
Serves 4


16 chicken drumsticks, skin-on (not a typo)
1/4 cup of rice wine vinegar
2 tsp chili powder
1 1/2 tsp paprika
2 tsp garlic powder
1/2 tsp onion powder
1/2 cayenne pepper
1/4 tsp sea salt
2 tsp coconut oil

Preparation:  The best part about this sauce is that it requires just five minutes of your time to throw together!  All you have to do is combine everything in a small saucepan, heat over a medium-high heat until it begins to simmer and then remove from the heat.  If you choose to use right away, great!  If not, be sure to keep the sauce refrigerated.  Put the 16 drumsticks in the sauce and then bake them at 375 F for about 40 minutes.  You can turn them once during the cooking process to make sure that they cook evenly and that the sauce cooks on all sides.  Enjoy!

Spiced Nuts
Serves 4


Here's a recipe for some quick and easy spiced nuts.  For events such as the Super Bowl, you should always have a snack situated on the bar, or small side tables.

2/3 cup almonds
2/3 cup pecans
2/3 cup hazelnuts
1 tsp chili powder
1/2 tsp cumin
1/2 tsp black pepper
1/2 tsp salt
1 tbsp coconut oil, melted

Preparation:  Once again, this is another easy Paleo snack to throw together for the festivities.  First toast the nuts in a large skillet over a medium-high heat.  This should only take a few minutes, and you don't need to use any cooking fat.  Then in a small bowl, combine all the spices, along with the salt and pepper.  Give it a good toss to make sure everything is well combined.  Once the nuts have toasted and taken on a golden brown hue, remove them from the heat and drizzle them with the oil.  Make sure the nuts are all coated well in the oil and then sprinkle with the spice mixture.  Finish it off with another good toss and they are ready to be served!

Other good paleo snacks are veggie platters, fruit bowls,  and bacon wrapped around asparagus.
